Carnival Cruise Line started introducing new menus to its dining rooms today, starting with the Carnival Conquest, following a successful rollout of the Carnival Dream. Emeril Lagasse, the chief culinary officer, and the chefs from Carnival collaborated to create the new menus. Emeril Selects, which the chef personally suggests, are among the alternatives on the new menus.
“Food is an ever-evolving art, so our approach to the dining room offerings is to infuse a selection of new dishes, feature more international flavors and complement the Carnival classics our guests love,” said Lagasse.
“Working with our skilled team of Carnival chefs, we recently tested and selected more than 60 new dishes to mix into the dining room rotation. I’m pleased that these dishes were very well received by our guests on Carnival Dream, so we are very excited to roll them out to the Carnival fleet.”
The Carnival Conquest in Miami, the Carnival Horizon, and four additional ships in the following months—the Carnival Sunrise, Carnival Vista, Carnival Radiance, and the Mardi Gras—will be the following ships to offer the new menus. Later in the following year, the new menu items will begin to be served on Carnival ships based in Australia.

The “Emeri Selects” menu features entrees such BBQ salmon, beef carpaccio, coffee-glazed roast duck and crab and shrimp cake.
