Air France Menu Prepared by Michelin Star Chef

Between July and October, passengers traveling in Air France’s long-haul La Premiere and Business cabins can savour meals prepared by two Michelin-starred chefs.

On a few departures from Paris, the airline will provide dishes created with an emphasis on sustainable and responsible catering by Michel Roth and Anne-Sophie Pic.

A selection of Roth’s meals will be given to passengers in the La Premiere cabin. Roth has received two Michelin stars in addition to accolades like the Bocuse d’or and Meilleur Ouvrier de France.

His menu includes a starter of the lobster medallion, green asparagus, and raspberry vinaigrette as well as an appetizer of Sturia caviar served with a pancake with smoked fish cream.

Verbena veal, vegetable and morel mushrooms, and fillet of brill in a shellfish sauce are among the eight main courses. They are all served with green vegetables and mussels.
The triple-Michelin starred chef, who has previously worked with Air France, will present her food in the long-haul business cabin.

She serves eight different meals, including chicken with tonka bean sauce, polenta with mushrooms, and braised beef with potato mousseline, plum chutney, and tarragon breadcrumbs.

By the end of 2022, all of the airline’s flights departing from Paris will exclusively serve sustainably caught fish along with French beef, dairy products, and eggs. This commitment to sustainable catering has been emphasised by the airline.

There will always be a vegetarian option, and all food will be made in France. Wherever feasible, produce will be local and in season, and sustainable farming will be promoted. All of the food on the menus for children and infants will be grown organically.

The airline will let customers pre-select their hot meal in the business class cabin to help decrease food waste, and it wants to recycle or do away with 90 percent of single-use plastic on board its planes by early 2023. Certain objects are donated to charities when they can no longer be used on board.
